Strong and loves the Texas heat

I am honestly considering growing a field of Amaranth instead of corn next year.

Germination rate is very high, I would sprinkle seeds on the ground and they will sprout in the next day or two.

I have a raised bed of sandy loam soil and the amaranth is exploding in growth and is thriving in it.

I used the leaves as quelites and ate them with tacos.

The plants has then bushed out and had tons of new growth.

It loves the Texas heat. It’s getting to about 90-100 degrees and this plant is having the time of its life. My blue Hopi is taking a beating and curls its leaves when the day gets too hot but the amaranth stands a little taller, points is leaves towards the sun and pops in color.

I will be saving the seeds for next year and use half of it to make a atole.

I strongly recommend this plant for anyone who enjoys the greens and the grain. 6 out of 5, strongly recommend for hot climate growers.
